ABOUT

THE STORY

I'm Erin and I'm the baker behind Grain & Co! I started baking as a hobby in 2016 when I was cooking in cafe kitchens around Belfast and needed a creative outlet. I managed to get a stall at a local farmers market once a month and began selling my baked goods.

It was a great way to test my recipes out and meet my customers but it wasn’t until 2020 when, like many hospitality workers I lost my job and I decided to make a go of it full time. 

In April 2020 I started selling whole cakes directly to customers through Instagram. Every week I would take orders for whole cakes and deliver them on a Saturday. They were only small cakes but it was clear that for a lot of people, a cup of tea and a good quality slice of cake was a treat that they looked forward to whilst working from home. 

Grain & Co has grown quickly over the last few months and I now bake for weddings, birthdays and coffee shops from my kitchen in Blackstaff Mill, Belfast.

THE CAKES

I like to use fresh, seasonal ingredients as much as possible, whether it be summer berries, autumn stone fruits or citrus fruit in January. I often preserve fruits in jams so that I can use them in the darker months when fresh fruit is a distant memory! 

The cakes are made to be soft and squishy and full of flavour. I love using fresh buttercream to decorate and you’ll always know a Grain & Co cake because it’s usually covered in flowers, some sourced from local florists and some grown in my garden.
